Wine-like complexity runs through the profile, adding an expressive aromatic character to the finish. Made using 120-hour carbonic maceration, where carefully selected ripe cherries ferment whole in a sealed, CO₂-rich environment before being slowly dried. The controlled fermentation develops pronounced fruit character and aromatic complexity, creating a distinctive, fruit-forward expression of Ram Estate.

Bright orange zest opens the cup, followed by dark, gently jammy mulberry through the mid-palate. Chamomile weaves through the aroma and into the finish, subtle at first but more noticeable with each sip. Bright acidity gives way to a gentle sweetness, trailing into citrus and a faint nuttiness. Fermented for 36 hours using a culture developed from raw, unrefined jaggery, then slowly dried on raised beds over 22 days. A fruit-forward, carefully developed natural that reflects the character of Karadykan Estate.

Intense dark chocolate up front, caramel building through the mid-palate, toffee carrying it all the way to the finish. Velvety and full-bodied, complex without being difficult. The Arabica brings sweetness and flavour depth, the Robusta brings body and structure. Washed and natural processing applied across the blend adds further layers. Roasted to CF 66.7, precisely where this blend peaks.
