Imperfect

Nature is not predictable. Harvests often vary, as you will never have the same rainfall, the same temperature, or the same timing of the dry season. All of these factors that are out of our control affect coffee differently and shape the cup in ways you can't fully predict. We've stopped trying to iron that out and what ends up in the bag is an honest record of how the year went.

Experimental

Indian coffee relies heavily on processing, and that's not a bad thing. We support methods that use locally grown produce from the same land as the coffee, because the microbial environment of a specific farm and region is unique to that place and that land. We work with farmers who are willing to push boundaries. Some of it works really well. Some of it teaches us something the hard way.

Beautifully Human

When to pick, how long to wait, when to stop. Every decision in coffee comes down to someone who has done this enough times to know. Behind every bag there is a farmer who decided to try something different this harvest, or a roaster who experimented slightly with the roast. These calls are not random, they are years of work, and that work is what you are actually tasting.
